Banana pudding cookies
Banana pudding cookies. These cookies are soft and packed with banana flavor! 🍌
Here’s the recipe👇🏾
3/4 cup unsalted butter , softened
1 banana, ripe
1 egg at room temperature
1/2 cup granulated sugar
1/4 cup packed dark brown sugar
1 teaspoon vanilla extract
1 3.5oz packet of banana cream pudding
1/2 cup of crushed vanilla wafers
1/2 teaspoon of salt
1 teaspoon of baking soda
2 cups of all-purpose flour
Whipped topping( I used pastry pride, but you can also use Cool Whip or fresh whipped cream)
* a fresh banana for topping is optional
Step 1: preheat your oven to 345°F and line a cookie sheet with parchment paper
Step 2: in a large bowl mixed together, your butter and sugars until they are light and fluffy(I recommend a stand or hand mixer)
Step 3: In a separate bowl mash your banana. Then add your banana, egg, vanilla, and pudding mix to your butter mixture.
Step 4: add in your baking soda, salt and flour until combined, and fold in vanilla wafers.
Step 5: using a cookie scoop, scoop one and a half inch balls onto your parchment paper and bake them for about 11 to 14 minutes and let them cool completely.
Step 6: when you’re ready to eat them top with a little bit of whipped topping, vanilla wafers, and a fresh banana slice.
