Hey everyone! So thrilled to finally share my go-to recipe for authentic Senegalese Nem, also known as crispy egg rolls. If you've ever wondered how to bring the vibrant flavors of Gambian and Senegalese cuisine right into your kitchen, this is it! I’ve been making these for years, and they’re always a family favorite. Trust me, once you try these homemade Nem (egg rolls), you might never go back to store-bought. They're perfect as an appetizer, a party snack, or even a light meal with a fresh salad. Here’s what you’ll need to make these incredible Nem: Ingredients: 1 lb ground beef or pork (or a mix, or even ground chicken for a lighter version!) 1 small onion, finely chopped 2 cloves garlic, minced 1 cup shredded carrots 1 cup shredded cabbage 1/2 cup vermicelli noodles, soaked in hot water and chopped 2-3 tablespoons soy sauce (adjust to taste) 1 tablespoon oyster sauce (optional, but adds depth!) 1 teaspoon black pepper 1/2 teaspoon ginger powder (or fresh grated ginger) 1 egg, beaten (for sealing the wrappers) 20-25 spring roll wrappers (or egg roll wrappers) Vegetable oil for deep frying Let’s Get Cooking – My Step-by-Step Nem (Egg Rolls) Guide: Prepare the Filling: In a large pan, heat a little oil over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes. Add the minced garlic and ground meat, breaking it up with a spoon. Cook until the meat is browned and cooked through, draining any excess fat. Add Veggies & Seasoning: Stir in the shredded carrots and cabbage, cooking for another 5 minutes until they start to soften. Add the soaked and chopped vermicelli noodles. Season with soy sauce, oyster sauce (if using), black pepper, and ginger powder. Mix everything well and cook for another 2-3 minutes, allowing the flavors to meld. Taste and adjust seasoning as needed. Let the filling cool completely – this is crucial to prevent soggy wrappers! Wrap 'em Up: Lay a spring roll wrapper on a clean, dry surface with one corner pointing towards you (like a diamond). Place a spoonful of the cooled filling near the bottom corner. Fold the bottom corner over the filling, then fold in the side corners. Roll tightly upwards, brushing the top corner with a little beaten egg to seal it. Repeat with the remaining filling and wrappers. Fry to Perfection: Heat about 2-3 inches of vegetable oil in a deep pot or wok over medium-high heat. Once the oil is hot (you can test it with a tiny piece of wrapper – it should sizzle immediately), carefully place a few Nem (egg rolls) into the oil, ensuring not to overcrowd the pan. Fry for 3-5 minutes, turning occasionally, until they are golden brown and crispy on all sides. Drain & Serve: Remove the fried Nem with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve immediately with your favorite dipping sauce – I love mine with a sweet chili sauce or a spicy mustard. These homemade Senegalese Nem are truly a labor of love, but so worth it!
