Buffalo Chicken & Tofu Caesar Vol-au-Vents

I'm not quite sure what the exact translation of Vol-au-Vent is, but if it means easy to eat then I nailed it 🤣 it's basically a puff pastry cup filled with stuff.

I did buffalo chicken for myself, tofu caesar for my girl, and chicken w/ tumeric rice for the dogs 😆

I marinated the chicken in white wine, chicken stock, minced garlic & onion, red chili pepper, salt, papper, paprika, cumin, oregano, and a little black truffle hot sauce.

While that marinates, make your puff pastry cups. Use round cookie cutters to cut out circles then using a smaller cutter cut half again to make a rim. Egg wash the circle, put the hollow circle on top, egg wash again, and bake at 400° until they're browned and puffy. Let them cool then pop the middle down with a spoon so you can fill them later.

Crisp some bacon then brown the marinaded chicken in the bacon fat, turn down the heat, add a little chicken stock, and simmer until it shreds apart. After shredding add butter, hot sauce (I like Stevo-O's Hot Sauce for Your Butthole 😂), mix, then fill some pastry cups. Cover with shredded cheddar and broil until melted, top w/ bacon bits, a drizzle of ranch, and some scallions.

The tofu was shaken in cornstartch w/ rotisserie chicken seasoning then browned in olive oil. These are pretty straight forward 😅 lettuce, croutons, tofu, and caesar dressing.

The dog one's I just used some of their regularly prepped food which is chicken and rice w/ veggies and tumeric 😆 idk if they know or not but they still enjoyed it 😁

Brands like Publix often have great options that work wonderfully. Before you even think about seasoning, make sure to press your tofu really, really well to remove excess water. This step is crucial for achieving that super crispy texture we all love. You can use a dedicated tofu press or simply wrap it in several layers of paper towels and place something heavy on top (like a stack of cookbooks or a cast-iron skillet) for about 30 minutes to an hour. Once pressed, cut your tofu into small, bite-sized cubes or triangles. While I used rotisserie chicken seasoning, which is incredibly flavorful, if you want to lean into a "buffalo" flavor profile, you could easily add a pinch of garlic powder, onion powder, and a touch of smoked paprika to your cornstarch mix. After browning in olive oil until golden and crisp, for an extra kick, lightly toss the hot, crispy tofu with a small amount of your favorite buffalo sauce (Stevo-O's, anyone? 😉) right before adding it to your Caesar mixture. This gives you that amazing buffalo flavor without making the vol-au-vent soggy. Pair this with fresh romaine, crunchy croutons, and a creamy Caesar dressing, and you've got a filling that's truly out of this world! Now, for our furry friends! Many of you asked about the dog-friendly vol-au-vents. While I used my dogs' regularly prepped chicken and rice with turmeric, it's totally possible to adapt this idea using their favorite wet food. If your pup enjoys a high-quality, 'homestyle' wet food, you can absolutely use a small amount as a filling. Just remember to check the ingredients to ensure it's safe for baking or heating slightly. For instance, if you're using a wet dog food that's already a complete meal, you can simply spoon a small amount into the baked puff pastry cups after they've cooled a bit. This minimizes any cooking of the dog food itself. My main goal when making treats for my dogs is always safety and nutrition. When adding turmeric, make sure it's just a tiny pinch, as too much can upset their stomachs. Always be mindful of seasonings and human ingredients that are toxic to dogs, like onions, garlic (though I used it for the human chicken, I kept it strictly out of the dog food!), and excessive salt. If you're using your dog's preferred healthy wet food as a base, it's often formulated to be nutritionally balanced. Just remember, these are treats, so moderation is key! It's so fun to share a special mealtime with our pets, and these little pastry cups make it feel extra fancy for them too! They definitely enjoyed their special turmericed chicken and rice blend!
