DIY Homemade Chipotle Chicken Protein Bowls
Ingredients
• 2 chicken breasts or rotisserie chicken
• 1 tablespoon olive oil
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1 teaspoon paprika
• 1 teaspoon cumin
• 1/2 teaspoon chili powder
• Salt and pepper, to taste
• Juice of 1 lime (or bottled lime juice)
• 1 cup fresh salsa
• 1 cup corn (with 1 red bell pepper and 2 minced jalapeños)
• 2 avocado or guacamole
• 1/2 cup shredded cheese
• 1/4 cup sour cream
• Fresh cilantro, chopped
• Lime wedges
• Black beans
• Cooked rice
Instructions
Prepare the Chicken
1. If using rotisserie chicken, shred or chop it to your liking.
2. In a small bowl, mix together the olive oil, garlic powder, onion powder, paprika, cumin, chili powder, salt, and pepper.
3. Coat the chicken with the seasoning mix.
4. (Optional) Heat a skillet over medium heat and cook the chicken until it’s grilled, charred, or sautéed to your preference.
5. Squeeze lime juice over the chicken for added flavor.
Prepare the Rice
Cook rice according to package instructions. Set aside.
Prepare the Black Beans
1. Heat the black beans in a pan over medium heat.

Prepare the Corn
1. Cook the corn in a skillet with a little olive oil.
