Lately I’ve been experimenting with ways to make our snacks feel a little more nutritious while still tasting really delicious — especially when I’m making foods my daughter and I both eat.

So this time:

• I swapped 1 banana for Nancy’s Probiotic Cottage Cheese because it’s creamier than other brands I’ve tried and works so well in baked goods

• used Ripple Kids milk after it was recommended by our daughter’s pediatrician for extra vitamins + nutrients

• and used melted coconut oil for a naturally sweeter flavor

One thing I will say: the cold milk hardened the coconut oil a little when it hit the bowl, so there were some chunks in the batter šŸ˜‚ BUT the muffins still turned out fluffy, moist, and perfectly golden brown.
