🍤🍚 Spring Chili Garlic Shrimp Rice Bowl

A bold, flavor-packed rice bowl with juicy chili garlic shrimp, a jammy soft-boiled egg, and fragrant scallion oil. It's spicy, savory, and totally spring-approved.
Ingredients:
• 1 cup jasmine rice, steamed
• 10–12 medium shrimp, peeled & deveined
• 2 cloves garlic, minced
• 1 tbsp chili garlic sauce
• 1 tbsp butter
• 2 soft-boiled eggs, halved
• 2 stalks scallion, sliced
• 1 tsp sesame seeds
• Chili flakes to taste
Scallion Oil:
• 3 tbsp neutral oil
• 3 stalks scallion, finely chopped
• Pinch of salt
Directions:
Heat oil, pour over scallions to make scallion oil. Set aside.
Sauté garlic in butter, add shrimp and chili garlic sauce. Cook 3–4 mins.
Serve shrimp over steamed rice.
Top with jammy egg halves, scallion oil, sesame seeds, and chili flakes.
Serve warm and enjoy!
