Baked Turkey Meatballs

What you need:

For the meatballs:

• 1 lb ground turkey

• 1 cup panko breadcrumbs

• 1/2 red onion. chopped

• 2 garlic cloves, minced

• 1/4 cup of crumbled feta-break up the big chunks.

• Handful of chopped parsley

• 1 egg

• Zezst of 1 lemon

• 1 tsp dried oregano

• Salt and pepper to taste

For the Tzatziki:

• 1/2 cup finely grated cucumber

• 1 cup thick whole milk plain Greek yogurt

• 1 Tbs fresh lemon juice

• 1/2 Tbs extra-virgin olive oil

• 1 garlic clove, grated

• 1 Tbs chopped fresh dill

• Salt to taste

For the Salad

Mix together sliced cucumber, tomato, and pickled red onion. Add drizzle of olive oil, a touch of red wine vinegar, and a sprinkle of oregano.

What you do:

1.) Preheat your oven to 400* F

2.) Hand mix all meatball ingredients until incorporated. Roll into golf ball sized balls.

3.) set onto baking sheet and bake for 15-20 minutes. After they are fully cooked, spray very lightly with olive oil and put under the broiler for 2 minutes to get a little color, being careful not to burn.

4.) While meatballs bake, make your tzatziki sauce, cucumber salad, and jasmine rice.

5.) Plate the rice, top with salad, meatballs, and sauce.

6.) Garnish with a drizzle of olive oil, lemon wedges, and chopped parsley.
