🍫Healthy Chocolate Fig Bites You’ll Crave📚
I can’t believe it’s back to school already. I’m currently finishing up a session in nursing school and then returning shortly after. I thought these quick dark chocolate fig energy bites would be perfect for school days. Enjoy!
Dark Chocolate Fig & Pistachio Energy Bites
Makes about 10–12 bites
Ingredients
½ cup fresh green & purple figs, finely chopped or mashed
1 cup old-fashioned oats
½ cup almond butter or peanut butter
3 tbsp honey
2 tbsp cacao nibs
2 tbsp chia seeds or ground flaxseed
¼ cup pistachios, finely chopped
¼ tsp vanilla extract
* Small pinch of salt
Instructions
1. Mash the figs. Finely chop your leftover fig slices, then mash them with a fork. A little texture is totally fine.
2. Mix the wet ingredients. Combine the figs, almond/peanut butter, honey and vanilla.
3. Add the dry ingredients. Stir in the oats, cacao nibs, chia seeds, pistachios and a pinch of salt.
4. Check the texture. You want a sticky mixture that holds together when squeezed. If it’s too wet from the figs, add another 1–2 tbsp oats.
5. Chill for 20–30 minutes. This makes them much easier to roll.
6. Roll into 10–12 balls. About 1 heaping tablespoon each works well.
7. Add the chocolate. Melt a little of your 100% cacao chocolate and drizzle it over the energy bites. Because it’s quite bitter, a thin drizzle is plenty.
8. Immediately sprinkle with a few crushed pistachios and cacao nibs before the chocolate sets.
9. Refrigerate until firm, about 15-20 minutes.
