✨Tuesday’s Meal✨Fajita Tacos
Tacos 🌮 on taco Tuesday is a must at this point. Dinner was easy and delicious but someone over there at Aldi’s is skimming on these fajitas. There is absolutely no way that bag would feed my boys.. they would laugh me out the kitchen🤣😭 I was so glad that pops came through and made brisket a couple days before and saved it. I added that to the pot and it saved the day 👏🏽🙏🏽 Take it from me, that bag only feeds 1 (ya win some, you lose some) so just grab the Birria Tacos and make them yourself in the crockpot. Anywho, dinner was 10/10 and we are all full! Good night and see ya for breakfast tomorrow! Enjoy! 😉-Kia 💋
Okay, so you saw how I rescued my taco Tuesday with some amazing brisket? Well, I get it, sometimes those store-bought fajita kits just don't cut it, especially if you have a hungry crew! If you're looking to make truly satisfying beef brisket fajita tacos, whether you're starting from scratch or using leftovers like I did, I've got some tips that'll make your dinner a guaranteed hit. First things first: the brisket itself. You want it tender, moist, and bursting with flavor. If you're cooking a fresh brisket specifically for fajitas, slow and low is definitely the way to go to achieve that 'moist & juicy' texture. I've found that seasoning it well the night before with a good fajita seasoning blend (or even just salt, pepper, cumin, and chili powder) really makes a difference. You can try a slow cooker for 6-8 hours on low, or oven-roast it at a low temperature (like 275°F) until it's fork-tender. This method ensures your brisket is perfectly cooked and ready to be shredded or thinly sliced for your tacos. But honestly, the real hack is using leftover smoked or slow-cooked brisket, just like the amazing brisket that saved the day for me! If you have some already cooked, simply shred it or slice it thin. Then, toss it with some colorful sliced bell peppers and onions in a hot pan with a little avocado oil (which is fantastic for sautéing, as the OCR mentioned!) until everything is heated through and the veggies are tender-crisp. A splash of fresh lime juice at the end brightens everything up and adds that authentic fajita flavor. Now for the fun part – assembling your brisket fajita tacos! Warm up your tortillas (corn or flour, the choice is yours, but I love soft flour for fajitas!). Load them up generously with that delicious brisket and pepper mixture. Don't forget your favorite toppings: sour cream, guacamole, salsa, shredded cheese, fresh cilantro – whatever makes your heart sing! And to make it a full, satisfying meal, just like our Tuesday dinner often includes, don't forget hearty sides like rice and beans. It turns a simple taco night into a feast that can easily feed five, or even more, without anyone laughing you out of the kitchen because there's not enough food! Brisket fajitas are fantastic because they're hearty, incredibly flavorful, and a great way to use up leftovers or impress guests with a seemingly gourmet meal. They might sound fancy, but with a little planning (or a good shortcut like mine!), they're totally an easy recipe for any night of the week. Give this beef brisket fajitas recipe a try, and I bet your family will be asking for them again and again!
