Browned butter, toasty oats, flaky salt…zucchini?

Day 3 of breaking in my apartment kitchen is dedicated to my plant queen @ Justine Snacks. She just posted this recipe on her IG and website so go go go make it!!

For the record, these are cookies have shredded zucchini in them…but in the same way that your grandmother would make chocolate zucchini bread. It’s complemented by nutty browned butter and toasted oats, warm brown sugar, dark chocolate chunks, and flaky sea salt (I put extra bc I love me the salt).

4.3/5 stars: I want to first acknowledge that I intentionally underbaked these cookies. However, these cookies do have a slight banana bread texture (think, super moist and soft). Am i complaining? No! I ate 4 in one sitting just to make sure they weren’t poisoned. But for the roommates that wanted a proper, crispy and chewy cookie - this delivered an unexpected texture. 5/5 for flavor - the browned butter and toasted oats really shine. Next time, I’m going to brown the butter for 2-3 minutes longer to get a deeper and nuttier flavor.
