**Ingredientes: **

- Harina Panadera 100%: 500g

- Agua 70%: 350g

- Aceite de oliva 48: 20g

- Sal 2%: 10g

- Levadura Instantánea 0.2%: 1g

**Instrucciones: **

1. Incorpora todos los ingredientes en un bol: agua, levadura, sal, aceite de oliva y harina.

2. Mezcla bien hasta que no quede harina suelta

en la masa.

3. Coloca la masa en una bolsa que cierre herméticamente (recuerda reutilizar tu bolsa

tantas veces como puedas) .

4. Haz un vacío casero introduciendo la bolsa en una olla con agua, tratando de sacar todo el aire.

5. Lleva la bolsa a la nevera a 9°C y deja fermentar entre 6 y 18 horas.

6. Saca la masa de la nevera y haz un pliegue: estira la masa sobre la mesa sin romperla, luego dóblala sobre sí misma como un sobre. Si se rompe o es difícil de estirar, haz otro pliegue con un reposo mínimo de 10 minutos entre uno y otro.

7. Bolea la masa y colócala en un molde con aceite de oliva donde la vas a hornear.

8. Deja reposar la masa tapada hasta que duplique su tamaño a 26-30°C.

9. Moja tus manos y usa tus dedos para decorarla con los sabores que más te gusten. En este caso, tomate cherry, pistacho y salsa pesto.

10. Hornea la focaccia por 25 minutos a 230°C.

Recuerda que la miga debe estar a 90°C antes de sacarla del horno.
