Ingredients:

• 1 cup long-grain white rice

• 2 cups water

• 2 tablespoons lime juice

• 1/3 cup chopped fresh cilantro

• Salt to taste.

Instructions:

1. Rinse the rice under cold water until it runs clear.

2. In a pot, combine the rice, water, and a pinch of salt. Bring to a boil.

3. Once boiling, cover with a lid, reduce the heat to low, and simmer for 18–20 minutes until the rice is cooked.

4. Remove from heat and let the rice sit (covered) for 5 minutes.

5. Fluff the rice with a fork, then stir in lime juice and chopped cilantro. Taste and add more salt if needed.
