Super simple pot roast with mashed sweet potato
2.5 lb pot roast
Garlic cloves
Fresh rosemary sprigs
Salt
Beef bone broth low sodium
Fresh cracked coarse pepper
3/4 stick salted butter
Baby rainbow carrots
3 sweet potatoes
Pumpkin pie seasoning I used Trader Joe’s
Real maple syrup I use Sap Jack (pink label)
Duck fat
Heavy cream
Pat dry roast. Make diamond cuts and stick rosemary and garlic. Add 2/3 of the butter to cast iron pot with duck fat. Add roast to hot cast iron with baby carrots and let sit on medium high heat for 5-7 minutes. Add in beef bone broth till it just reaches the carrots, remove from heat and cover. Transfer to 400° degree oven. Cook for 1 hour to 1 hr 20 mins.
Boil sweet potatoes. Drain. Add 1/4 butter, pepper, salt, pumpkin pie seasoning, real maple syrup, and heavy cream. Mash and adjust seasoning if needed.
Serve roast over mashed potatoes and use pan drippings as gravy.
