From my experience, the key to achieving those coveted crispy edges on smash burgers is using a very hot cast-iron skillet or griddle. The intense heat helps caramelize the outside of the beef patties, enhancing flavor and texture. When forming the patties, it’s important not to over-pack the ground beef. Using loose 2-ounce balls allows you to smash them thinly on the pan, promoting even cooking and creating the satisfying crispy crust. I also highly recommend making the burger sauce exactly as described: mixing mayonnaise, ketchup, mustard, pickle juice, and BBQ sauce. This blend gives a creamy yet tangy brightness that complements the richness of the melty American cheese perfectly. Regarding toppings, I love adding thinly sliced onions and crispy cooked bacon for extra crunch and flavor. Toasting the buns in butter until golden adds a wonderful buttery layer and prevents sogginess once the sauce and juicy patties are stacked. Finally, stacking two thin patties per burger rather than one thick patty ensures maximum cheesiness and crispy surface area per bite. These tips have always helped me replicate that nostalgic diner-style smash burger experience right from my kitchen!
