Hot Chocolate, but make it a cookie.

Ingredients:

• 1 cup butter, softened

• 1 ¼ cups brown sugar, packed

• ¼ cup granulated sugar

• 1 large egg

• 1 egg yolk

• 1 tsp vanilla extract

• 2 ½ cups sifted all-purpose flour

• ½ cup unsweetened cocoa powder

• 1 tsp baking soda

• ½ tsp salt

• 1–2 tsp instant coffee or espresso powder (adjust to taste)

• 12 oz semisweet chocolate chunks

• 1 cup marshmallow bits

Instructions:

1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

2. In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).

3. Beat in egg, egg yolk, and vanilla extract.

4. In a separate bowl, whisk together flour, cocoa powder, baking soda, salt, and instant coffee.

5. Gradually mix the dry ingredients into the wet mixture until a dough forms.

6. Fold in chocolate chunks and marshmallow bits (save a few for topping, if you like).

7. Scoop dough (about 2 tbsp per cookie) onto baking sheets, spaced 2 inches apart.

8. Bake for 9–11 minutes, or until edges are set but centers are soft.

9. Cool on baking sheet for 5 minutes, then transfer to a wire rack.
