For a turkey version of this use ground turkey and spicy turkey breakfast sausage
* white rice - cook separately.
* Seasoned pork loin
* Seasoned Ribeye steak
* chicken livers
* bell pepper
* red bell pepper
* onion
* celery
* parsley
* green onions
* Sage
* Tony’s seasoning- I like to add my own (chili powder, oregano, parsley, sage, thyme, paprika, bay leaves, garlic, salt, pepper, and cayenne/ dry ingredients will work but fresh ingredients makes it taste so much better) but Tony’s will do as a short cut! Lol!!
* Homemade chicken broth
* flour, cooking oil
Brown the meat with a little oil.
Then add bell peppers, red bell peppers, onions, celery. Then add Tony’s or fresh ingredients listed above except for bay leaves. Add a little flour to the mixture and cook down flour. Add the chicken broth and make sure you scrap up the brown bits in the pan. It has lots of flavor!! Cover and simmer for 8-10 minutes. Then fold in your cooked rice. Top it off wit with fresh chopped green onions.
Happy cooking!!
Dirty rice dressing is a classic comfort food that combines the heartiness of seasoned meats with the aromatic freshness of vegetables and herbs, creating a deeply satisfying dish that is perfect for family gatherings or holiday meals. Traditionally, dirty rice uses ground pork, liver, and spices all cooked together with white rice to give it its signature color and flavor. In this recipe, the inclusion of items like seasoned ribeye steak and pork loin offers a rich twist that elevates the dish beyond the typical version. One key to flavorful dirty rice dressing is the use of Tony’s seasoning or a homemade blend of spices like chili powder, oregano, parsley, sage, thyme, paprika, garlic, cayenne, and bay leaves. This seasoned mix infuses the dish with layers of smoky, earthy, and slightly spicy notes that awaken the palate. Using fresh herbs and vegetables such as bell peppers, onions, celery, green onions, and parsley brings brightness and texture, balancing the richness of the meat. The technique of browning the meats separately in cooking oil ensures a caramelized surface, which adds a deep, savory flavor. Adding flour and cooking it down before stirring in homemade chicken broth helps create a thickened sauce that clings to every grain of rice. Chicken livers are a traditional ingredient that intensifies the 'dirty' appearance and adds a unique depth of taste that true dirty rice enthusiasts appreciate. For those who prefer a leaner or alternative option, the recipe suggests using ground turkey and spicy turkey breakfast sausage as a great substitution. When folding in the pre-cooked white rice, it's important to maintain the rice's separate grains rather than letting it become mushy. After simmering, topping the dish with fresh chopped green onions adds a final burst of freshness and mild pungency. This recipe showcases how combining fresh ingredients, bold seasonings, and traditional cooking techniques create an irresistible side dish or main course that celebrates Southern culinary heritage. Experimenting with the spice level or meat types can personalize the dish further, making it versatile for different tastes and occasions. Whether served with turkey, chicken, or as a standalone dish, dirty rice dressing offers warmth, comfort, and incredible flavor that will delight food lovers everywhere.
