Kale Salad (w pomegranate, walnuts, goat cheese)

~ingredients: 9 oz kale, 1/2 red onion, handful of chopped parsley, carmelized walmuts, goat cheese, pomegranate seeds

~dressing ingredients: 1/3 cup of olive oil, 2 tbsp of red wine vinegar, 3 tbsp of honey, 3 tbsp of dijon mistard, salt, pepper (adjust to taste as needed)

~servings: 6

~instructions:

1. Wash and dry kale

2. Slice red onion into thin strips (i only had a half but you can use a whole one if you’d like!) I like to soak it in water for a few minutes so it has less of a bite to it

3. Make the dressing: mix all dressing ingredients together. Disclaimer: these measurements are rough estimates. I honestly taste as I go and adjust as necessary 😅

4. Drain red onion and mix with kale. Pour dressing over the kale and mix throughly. Place in fridge for minimum 30 minutes (longer the better) Letting the kale marinate in the dressing makes it softer and it soaks up the dressing flavor 😌

5. Before serving, take out from fridge and mix in the rest of the ingredients (goat cheese, pomegranate seeds, carmelized walnuts, parsley)

6. Give it a good mix and serve!
