I like a simple mixture of seasoned flour or cornmeal, sometimes adding a pinch of paprika or garlic powder for extra flavor. Before frying, pat the fish dry so the coating sticks better. When it comes to frying, using oil with a high smoke point such as vegetable or peanut oil helps create a crisp texture without burning. I preheat the oil to around 350°F (175°C) and fry the fish in small batches to maintain oil temperature. Don't forget to drain the fried fish on paper towels to remove excess oil. Serving with fresh lemon wedges and your favorite dipping sauces adds a wonderful finishing touch.
