Makes about 18 cookies
1 stick softened kerrygold butter (1/2 cup)
3/4 cup brown sugar
2 tbsp coconut sugar (optional)
2 tsp vanilla extract
1 egg
3/4 cup oats
1.25 cups Kodiak cake mix
3/4 cup chocolate chips
*Use a hand mixer or kitchen aid mixer to combine ingredients.
1. Preheat oven to 350°
2. Combine butter and brown sugar and mix.
3. Add vanilla and egg and mix.
4. Add oats and Kodiak cake mix again.
5. Fold in chocolate chips.
6. Using a cookie scoop, scoop onto greased baking sheet.
7. Bake for 9-11 minutes for desired crispiness.
