Apple Fritters 🍎

Apple filling - 2 apples peeled and cut into cubes, 3 tbsp sugar, 2 tbsp butter cold, 1 tsp cinnamon

Fritter dough - 1 1/8 tsp instant active yeast, 1/3 cup milk warmed, 1/4 cup sugar, 1 large egg, room temp, 1 3/4 cups flour, 1/4 cup bourbon, 2 tbsp butter room temperature, 1/4 tsp cinnamon

Bourbon Glaze - 1 1/2 cups powder sugar, 1 1/2 tbsp bourbon, 1 tbsp milk, 1 1/2 tbsp butter

Instructions

1. Heat a medium saucepan over medium high heat. Add in the apples, sugar, butter, and cinnamon and cook for about 5 minutes until soft and remove from burner.

2. In a large bowl combine yeast, warm milk, and 1 tablespoon of the sugar. Stir and let sit for 15 minutes.

3. Add in the remaining sugar, egg, and half of the flour. Stir everything to combine, then add in the remaining flour and the bourbon. Mix well then add in the butter and cinnamon. Mix!

4. Grease a second bowl. Toss the dough into it, cover with a towel and let it rise for 1 hour.

5. Place some parchment paper on the counter, hang on it’ll make sense;)

6. Pat your hands with flour and on a lightly floured surface place the dough, with your hands spread out the dough into a large rectangle. Spoon the apples out on top of the dough. Grab the top corners of the dough furthest from you and fold it over the apples to the bottom two and pinch around the sides to seal it.

7. Flatten it out again to almost the original size (some apples might pop out, you’re doing it correctly)

8. Line your counter top with parchment paper - Take a cup and cut out cookie like shapes into the dough and transfer onto the paper. Think of it like really messy cookies:) repeat until all dough is used!

9. Take a large skillet or whatever pan you want and fill it with enough oil so that it’s taller than the height of the fritters.

10. heat that up (to test if the oil is ready dip your hand in some water and flick a few drops into the pan, it’ll sizzle and pop) carefully lay a few of the fritters in. When the edges turn golden flip. When done pull them out and lay on a cookie sheet. Let cool and then dip them into the icing and run off. Enjoy!
