Apples:
2-3 honey crisp apples (thinly sliced - you should have roughly 4 cups of sliced apples. Try to cut them as instantly as possible!)
2 tbsp butter (grass fed)
1 tsp cinnamon
1/4 tsp nutmeg
Cake:
Wet:
1/2 cup almond milk
3/4 cup Greek yogurt (plain, nonfat)
2 tsp vanilla extract
4 tbsp butter (grass fed, melted)
2 eggs (large, room temp)
Dry:
1 1/4 cup flour
2 tbsp corn starch
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
Topping:
1/4 cup oat flour
1/8 cup monk fruit
1 tbsp butter (softened, grass fed)
1/4 tsp cinnamon

Melt butter in a skillet, add apples and spices, and cook 8–10 minutes until soft. Mix topping ingredients until crumbly and set aside. Whisk dry ingredients in one bowl and wet in another, then combine just until smooth. Fold in apples, reserving ½ cup. Pour batter into pan, top with remaining apples and crumble, and bake at 325°F for 50–55 minutes until a toothpick comes out clean.
