CheesyCajun Chiken Bites w/creamy Alfredo Linguine
Ingredients
1½ lbs boneless skinless chicken breasts, cut into thick bite-sized strips
2 tablespoons olive oil
3 tablespoons unsalted butter, divided
1½ teaspoons Cajun seasoning
1 teaspoon garlic powder
½ teaspoon smoked paprika
Salt and black pepper, to taste
For the Alfredo Linguine
12 oz linguine pasta
4 cloves garlic, minced
1½ cups heavy cream
½ cup whole milk
6 oz Velveeta cheese, cubed
¾ cup freshly grated Parmesan cheese
1 cup shredded mozzarella cheese
½ teaspoon Cajun seasoning (to tie the flavor together)
Salt and pepper, to taste
Chopped parsley, for garnish
Directions
Bring a large pot of salted water to a boil. Add linguine and cook until al dente, about 10–11 minutes. Reserve ½ cup of pasta water, then drain and set aside.
While pasta cooks, heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add the chicken pieces and season with Cajun seasoning, garlic powder, paprika, salt, and black pepper.
Sear the chicken bites for 8–10 minutes, flipping occasionally until golden and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add minced garlic and sauté for about 1 minute, just until fragrant.
Pour in the heavy cream and milk. Stir in the Velveeta cubes and cook until fully melted and smooth.
Add Parmesan and mozzarella, stirring until the sauce is thick and glossy. Season with additional Cajun seasoning, salt, and pepper to taste.
Add the cooked linguine into the sauce and toss until fully coated. If needed, add a splash of reserved pasta water to loosen the sauce.
Serve the Alfredo linguine onto plates and top with the seared Cajun chicken bites. Garnish with chopped parsley and serve immediately.
