Soft & fluffy Rainbow Cinnamon Rolls
I wanted to take a classic cinnamon roll and give it a little spring moment without changing what actually makes it good. The dough stays soft, the cinnamon sugar melts into every layer, and the rainbow swirl gives you that moment when you pull them apart. These are the kind of rolls that make people ask for more.
Ingredients
Dough
3½ cups all-purpose flour
¼ cup sugar
2¼ teaspoons active dry yeast
1 cup warm milk
¼ cup melted butter
1 egg
½ teaspoon salt
Gel food coloring (pink, blue, purple, or any colors you like)
Filling
½ cup softened butter
¾ cup brown sugar
1 tablespoon cinnamon
Cream Cheese Frosting
4 oz cream cheese, softened
2 tablespoons butter
1 cup powdered sugar
1 to 2 tablespoons milk
½ teaspoon vanilla
Instructions
1. Combine warm milk, sugar, and yeast. Let sit 5–10 minutes until foamy.
2. Add butter, egg, and salt. Mix in flour gradually and knead until smooth and slightly tacky, about 8 minutes.
3. Cover and let rise until doubled, about 1 hour.
4. Divide dough and knead a different gel color into each portion.
5. Roll each color into a thin sheet, stack them, then gently roll into one sheet.
6. Spread butter, then add brown sugar and cinnamon evenly.
7. Roll tightly into a log and slice into 9–12 rolls.
8. Place in a greased dish, cover, and let rise again until puffy, about 30–45 minutes.
9. Before baking, pour 2–3 tablespoons heavy cream around the rolls. This gives them that soft bakery texture.
10. Bake at 350°F for 22–25 minutes until lightly golden.
11. Mix frosting until smooth and spread over warm rolls.
Why I make these at home
You control the softness and sweetness, and you get something that actually looks impressive when it comes out of the oven. The process is also oddly calming, layering the colors, rolling the dough, and watching them rise.
My personal twist
I keep the filling classic on purpose. The rainbow is the wow factor, and adding extra flavors would compete with it. Let the swirl be the star.
How I would improve it next time
I want to try a lavender cream cheese frosting to lean into the pastel spring feel even more. I would also test chilling the colored dough overnight before rolling to see if the layers stay more defined instead of blending together.
