Finely Chopped Creamy Chicken Salad
You guys… this Chopped Creamy Chicken Salad is my go to. I throw the chicken, the celery and parsley into the food processor to finely chop it, and that finely chopped texture just hits different. It’s packed with flavor, super creamy, and has that perfect crunch from the celery. The kind of recipe you make once and suddenly you’re meal-prepping it every single week. It’s perfect for sandwiches, wraps, lunches, or just grabbing a spoonful straight out of the bowl—no judgment here. If you love easy, fresh, flavorful meals, this one’s going straight to the top of your list.

—Ingredients—
1 Rotisserie chicken (I used just the breast)
4 stalks of celery
A handful of parsley
1 cup mayonnaise
1/2 cup sour cream
3 tablespoons dill relish
1 heaping tablespoon stone ground mustard
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika (or smoked paprika)
1 tablespoon dill weed
1 teaspoon black pepper
2 teaspoons salt (or to taste)
The juice of one lemon
1. Remove the breast meat from the rotisserie chicken and place it into a food processor. Pulse until the chicken is finely chopped (cold chicken works best for an even texture). Transfer to a large mixing bowl.
2. Add the celery and parsley to the food processor and pulse until finely chopped. Add them to the bowl with the chicken.
3. Pour in the mayonnaise, sour cream, dill relish, stone-ground mustard, garlic powder, onion powder, paprika, dried dill weed, black pepper, salt, and freshly squeezed lemon juice. Stir until everything is fully combined and creamy.
4. Serve with your favorite crackers or fresh veggies, or enjoy it tucked into a sandwich or wrap.
Okay, so you've seen my obsession with this Finely Chopped Creamy Chicken Salad, and I know some of you might be thinking, 'but what if I don't like celery?' No worries at all! While I personally love the crunch it adds, this recipe is super adaptable. If celery isn't your jam, you can easily swap it out for finely diced red bell pepper or even some water chestnuts for a similar crisp texture. Another great option is to simply omit it and add more fresh herbs like chives or extra parsley for a flavor boost without the crunch. The key is still that beautiful finely chopped texture, so whatever you choose, make sure your food processor does its magic with a few quick pulses! Speaking of meal prep, this creamy chicken salad is truly a lifesaver for busy weeks. I usually make a big batch on Sunday, and it stays fresh in an airtight container in the fridge for 3-4 days. It's so much more than just a sandwich filler! Here are some of my favorite ways to enjoy it throughout the week: Lettuce Wraps: Skip the bread and spoon it into crisp lettuce cups (butter lettuce or romaine works great) for a lighter, refreshing lunch. Stuffed Avocados: Halve an avocado, remove the pit, and fill the well with a generous scoop of chicken salad. Drizzle with a little extra lemon juice if you like! On Crackers or Cucumber Slices: Perfect for a quick snack or appetizer when friends come over. In Pasta Salad: Mix it with some cooked pasta, a little extra mayo, and some cherry tomatoes for a delicious and hearty pasta salad. On a Bed of Greens: Just a simple salad base with a scoop of chicken salad on top makes for an easy and satisfying meal. And don't forget the power of a good food processor for achieving that signature finely chopped texture. Mine, a NINJA, makes quick work of the chicken, celery, and parsley. Just a few pulses, and everything is perfectly uniform – that's the secret to why this salad tastes so good and isn't just chunky bits. The 'AUTO IQ PROFESSIONAL PROCESSOR' setting often gets it just right. No more spending ages dicing by hand! Want to switch things up? This creamy chicken salad recipe is incredibly versatile. Here are some of my favorite ways to customize it: Sweet & Savory: Add a handful of chopped grapes, dried cranberries, or diced apple for a touch of sweetness. Toasted pecans or walnuts would also be delicious for extra crunch. Herb Power: Experiment with different fresh herbs! Dill is amazing, but fresh chives, tarragon, or even a hint of mint can elevate the flavor profile. Spicy Kick: A pinch of cayenne pepper or a dash of hot sauce can give it a nice zing. Different Mustards: While stone-ground mustard is my go-to, try Dijon for a sharper flavor or even a touch of honey mustard for sweetness. Greek Yogurt Swap: For a slightly lighter version, you can swap half of the mayonnaise and sour cream for plain Greek yogurt. It keeps it creamy but adds a tangy twist and a protein boost. Remember, the quality of your ingredients really shines through here. Using a good quality mayonnaise and fresh herbs makes a difference. And don't be afraid to taste and adjust the seasonings – a little more salt, pepper, or a squeeze of lemon can really brighten up the flavors. That perfect balance of creamy, crunchy, savory, and a hint of tang is what makes this finely chopped chicken salad so irresistible. It's truly a winner for any occasion, from a quick lunch to a potluck!
