Ingredients
* Fresh jalapeños and mini sweet peppers, halved and seeded
* Raw lobster meat, finely chopped
* Fresh spinach, finely chopped
* Garlic, minced
* Olive oil

* Onion powder
* Salt and black pepper

Lobster Tomato Pesto Purée
* Cooked lobster meat
* Tomato pesto
* Olive oil
* Fresh spinach leaves, for garnish
Directions
1. Preheat oven to 375°F.
2. Combine the raw lobster meat with chopped spinach, minced garlic, olive oil, garlic powder, onion powder, salt, and black pepper.
3. Stuff the lobster mixture into the jalapeños and mini sweet peppers.
4. Bake for 20–25 minutes, or until the lobster is fully cooked and the peppers are tender.
5. Whisk together the garlic chili oil, honey, lemon juice, chopped spinach, and red pepper flakes. Drizzle over the warm stuffed peppers.
6. Blend the cooked lobster with tomato pesto and a drizzle of olive oil until smooth. Spoon into a serving bowl and garnish with fresh spinach leaves.
7. Serve immediately with the lobster tomato pesto purée on the side.
