Chickpea Cinnamon French Toast
Ingredients
• 1 can Goode Foods chickpeas, drained and rinsed
• ¾ cup milk (any kind)
• 2 eggs
• 1 tbsp maple syrup
• 1 tsp vanilla extract
• 1 tsp cinnamon
• pinch of salt
• thick slices of bread (Texas toast works best)
• butter or oil for cooking
Toppings
• maple syrup
• powdered sugar
• berries
• butter

Instructions
1. Add chickpeas, milk, eggs, maple syrup, vanilla, cinnamon, and salt to a blender.
2. Blend until completely smooth and creamy.
3. Pour the batter into a shallow bowl.
4. Dip thick bread slices into the batter and soak for 10–15 seconds.
5. Cook in a buttered skillet over medium heat for about 3–4 minutes per side until golden brown.
6. Stack the toast and top with maple syrup, powdered sugar, berries, and butter.
