Marry Me Butter Beans

I now pronounce you…. OBSESSED.

2 cans drained & rinsed butter beans

1 small onion, minced

3-4 cloves garlic, minced

sun dried tomatoes (idk how much I used, use what looks good to you)

1 tsp chicken bouillon

1 1/2 cup chicken stock

1 cup heavy cream

1/2 cup grated parm

Handful of spinach, roughly chopped

Chili oil or chili flakes to taste

Salt & Pepper to taste

Squeeze of Lemon (optional)

I started by drizzling a medium heat sauté pan with avocado oil and a big spoonful of chili oil (you can use chili flakes if u have that) I like things spicy so, you can omit it if you want.

Add your onion, garlic and tomatoes. Sauté for a few minutes until your onions start looking slightly translucent— don’t burn ur garlic. If it’s getting too hot, turn it down.

Next you’ll add your beans, chicken stock and chicken bouillon. Let the chicken stock reduce by half. Once reduced, add cream and Parmesan cheese. Don’t boil your cream at too high of a temp, it will separate if you’re not careful. Stay in the low-medium to medium range. Let the cream reduce down a little until it starts to thicken up.

Lastly, mix in your chopped spinach and let it wilt down into the beans. At this point, you can add salt & pepper to taste. I waited until the end to add it because both bouillon and parm has high sodium and it would be easy to over salt.

I finished the pan with a good squeeze of lemon. This is optional but I feel like it REALLY brightened the flavor up. I served it over mashed potatoes with my 4-ingredient bread! Perfect!
