I’m always on the lookout for new ideas myself, so here’s how I tackle my 'what I eat in a day' for my corporate job, hoping it sparks some inspiration for your office meals and snacks! My mornings usually kick off with something that’s both quick to prepare and really filling. My absolute favorite is a simple yet delicious avocado toast topped with a perfectly fried egg. It’s packed with healthy fats and protein, keeping me energized and focused until my essential morning iced coffee. For those who aren't big on eggs or avocado, a quick smoothie made with protein powder and fruit, or even overnight oats prepped the night before, can be fantastic alternatives to fuel your corporate day and avoid that mid-morning hunger pang. Mid-morning and afternoon slumps are real, and that’s where smart snacking comes to the rescue. I always keep a stash of easy-to-pack items like apples and peanut butter. It’s a classic combo that provides fiber and healthy fats, giving me a sustained energy boost without the sugar crash. Another absolute lifesaver for me is string cheese – it's a convenient, protein-packed snack that helps curb hunger. Sometimes, I’ll swap these out for a handful of almonds or a small container of berries if I'm craving something different. The key is having these ready so you don't reach for less healthy office treats when hunger strikes. Lunch is where I try to get a good balance of greens and protein. One of my current obsessions is a deconstructed 'wonton taco salad.'
