Using portobello mushrooms as the base is a great choice because they have a meaty texture and hold stuffing well. In addition to the ingredients listed like cream cheese, Italian sausage, and Parmesan, you can experiment by adding chopped spinach, sun-dried tomatoes, or even some chopped nuts for extra texture. If you're watching carbohydrates, this recipe is ideal as it keeps the carb content low while packing plenty of flavor and richness thanks to the cheeses and sausage. When preparing the mushrooms, be sure to clean them gently with a damp cloth rather than rinsing under water to avoid sogginess. Removing the stems creates a perfect cavity for stuffing. Baking at 325°F for about 30 minutes allows the cheese to melt thoroughly and the sausage flavors to blend beautifully without drying out the mushrooms. Sprinkling mozzarella on top adds a nice golden finish and extra gooeyness. For an even healthier twist, consider using turkey sausage or adding herbs like fresh basil or parsley as garnish. Bringing stuffed mushrooms to a party is always a crowd-pleaser because they’re easy to eat with fingers, travel well, and appeal to many dietary preferences. Plus, no one will guess they’re low carb! This recipe can be doubled or tripled for larger gatherings and even prepped ahead of time—just keep them refrigerated and bake fresh when ready to serve. Overall, stuffed mushrooms are a fantastic, flavorful snack or side dish that balances indulgence with wholesome ingredients, making them a favorite to make repeatedly.

I use crab meat instead of sausage, but I’m going to try the sausage!
