3 Ingredient Creamy Udon Recipe🍅🥫🍝
Did you know blending tofu can make a creamy sauce mixture?😜
I had about half a jar of pasta sauce and decided to mix it with blended tofu and it tasted similar to a vegan ricotta😋😋
✎ Ingredients:
*1 pack udon noodles
*8oz pasta sauce
*5-6oz soft tofu (blended)
Directions:
1. Cook udon or noodles according to package directions. Drain and set aside.
2. Heat up pasta sauce and add in udon noodles.
3. Optional- taste test and see if seasonings are needed.
4. Turn off heat and add blended tofu and mix.
This comes out savory and creamy plus you get the protein from tofu!
This is super simple, but you can add bacon and spinach!🥓🌱

When I first tried making this creamy udon recipe, I was amazed at how blending soft tofu with pasta sauce created such a rich and velvety sauce that reminded me of vegan ricotta cheese. Tofu is an excellent ingredient for adding creaminess without the heaviness of dairy, making this dish not only tasty but also lighter and protein-packed. I like to use organic soft tofu because its smooth texture blends perfectly, but silken tofu works beautifully too. Cooking the udon noodles according to the package instructions ensures they stay chewy yet tender, creating a delightful base that soaks up the creamy sauce. One tip I found helpful is to gently heat the pasta sauce first and then combine it with the noodles so that everything is warm before adding the blended tofu. Mixing the tofu off the heat preserves its delicate creaminess and prevents curdling. For those looking to elevate the dish, adding crispy bacon or fresh spinach brings extra layers of flavor and nutrition—bacon adds a smoky crunch while spinach contributes vibrant color and vitamins. This recipe is very flexible; you can use any noodles you prefer, like soba or spaghetti, though udon’s thick texture pairs best with the creamy sauce. It’s a quick meal to whip up on busy days or when you want comfort food with minimal effort. Overall, this creamy tofu-based sauce is a clever way to enjoy comfort noodles with fewer ingredients and more nutrition. I highly recommend giving it a try for a satisfying vegan or vegetarian option that doesn’t skimp on flavor.
