¼ cup chopped sun-dried tomatoes 🍅 + 2 tbsp oil 🫒

½ lb chicken (thighs or breasts), chopped 🍗

¼ tsp salt 🧂

¼ tsp red pepper flakes 🌶️ (optional)

4 roma tomatoes, chopped 🍅

¼ cup fresh basil 🌿

8 oz fresh spinach 🥬

3 garlic cloves, minced 🧄

3 tbsp olive oil 🫒

📌 Instructions

1️⃣ Cook Chicken & Sun-Dried Tomatoes 🍗🍅

Heat olive oil over medium-low. Add sun-dried tomatoes + oil, then chicken, salt & red pepper flakes. Cook ~5 min until no longer pink.

2️⃣ Add Veggies 🥬🧄

Stir in roma tomatoes, basil, spinach, and garlic. Cook 3–5 min until spinach wilts and tomatoes soften.

3️⃣ Make it Pasta-Perfect 🍝✨

Cook spaghetti al dente. Drain, then toss into skillet with chicken & veggies. Heat through, stirring to coat in flavors.

4️⃣ Finish & Serve 🌿🍋

Adjust salt, add more basil, or a drizzle of olive oil if desired. Serve warm!
