Red Pepper, Spinach & Mozzarella Stuffed Chicken

This juicy stuffed chicken breast recipe is filled with roasted red peppers, garlicky spinach, and melty mozzarella. A flavorful, cheesy dinner that’s easy enough for weeknights but elegant enough for guests.

⏱ Prep: 15 min | Cook: 30 min | Total: 45 min

🍴 Serves: 4 | ~365 kcal per serving

Ingredients:

4 boneless, skinless chicken breasts

1 cup roasted red peppers (sliced)

2 cups fresh spinach

1 cup mozzarella cheese (shredded)

2 garlic cloves (minced)

1 tbsp olive oil

1 tsp Italian herbs

Salt & black pepper, to taste

Instructions:

1. Preheat oven to 375°F (190°C).

2. Slice a pocket into each chicken breast (don’t cut all the way through).

3. Heat olive oil in skillet → sauté garlic 1 min. Add spinach, cook until wilted.

4. Stuff each chicken breast with roasted peppers, spinach & mozzarella. Secure with toothpicks if needed.

5. Season outside with salt, pepper & Italian herbs.

6. Place in greased baking dish → bake 25–30 min until chicken reaches 165°F (74°C).

7. Remove toothpicks, rest 5 min & serve warm.
