🌸 Spring Recipe Challenge: Cranberry & Spinach Stuffed Chicken 🌸
Ingredients:
• 4 boneless, skinless chicken breasts
• 1 cup fresh spinach, chopped
• 1/2 cup dried cranberries
• 1/2 cup goat cheese, softened
• 2 cloves garlic, minced
• 1 tbsp olive oil
• 1 tsp paprika
• 1 tsp Italian seasoning
• Salt & pepper to taste
How to Make (Oven Method):
1. Preheat oven to 375°F (190°C)
2. Slice each chicken breast horizontally to create a pocket (don’t cut all the way through).
3. In a bowl, mix spinach, cranberries, goat cheese, and garlic.
4. Stuff each chicken breast with the mixture and secure with toothpicks if needed.
5. Rub chicken with olive oil, then season with paprika, Italian seasoning, salt & pepper.
6. Place in a baking dish and bake for 25–30 minutes, or until chicken is fully cooked (internal temp 165°F).
7. Optional: Broil for 2–3 minutes at the end for a golden top 🔥
