Guiyang Food Guide: Authentic Guizhou Flavors
If you’re looking for a place in Guiyang that’s suitable for hosting guests or family gatherings while enjoying authentic Guizhou cuisine, Dingjia Kitchen is a solid choice.
It’s said that this restaurant was founded by the team behind the well-known “Dingjia Crispy Pork Bits (CuiShao)” brand in Guiyang.
Located on the 7th floor of THE ONE Shopping Center on Zhongshan East Road in Yunyan District, it’s a typical mall-style restaurant with private dining rooms—ideal for group meals.
We ordered a set menu, and a few dishes really stood out:
⸻
🥔 Shredded Potato with Crispy Pork & Pickled Greens ⭐⭐⭐⭐
If I had to recommend just one dish, this would be it.
It’s surprisingly “magical”:
➤The potatoes are soft but not mushy or watery
➤The texture almost resembles shredded radish
➤Combined with crispy pork bits and pickled greens, it’s layered and flavorful
This was unanimously the favorite dish of the night.
⸻
🍖 Guizhou-style Kung Pao Beef Tendon ⭐⭐⭐
➤Tender yet chewy texture
➤Slightly sweet and spicy flavor
➤Perfect with rice
A classic, reliable “rice killer” dish.
⸻
🍲 Sour Soup Meatballs with Vermicelli ⭐⭐⭐
➤Flavor similar to Guizhou’s iconic sour soup (like Kaili-style fish soup)
➤Refreshingly tangy and appetizing
➤Vermicelli absorbs the broth beautifully
Definitely a dish that makes you want an extra bowl of rice.
⸻
🥘 Braised Beef Brisket with Tofu in Roasted Chili Sauce ⭐⭐⭐
Another dish in the sour-soup flavor profile:
➤Beef brisket is tender and fully infused with broth
➤Tofu is silky and delicate
➤Flavor combines sourness, garlic aroma, and rich meatiness
⸻
🐷 Braised Pork with Preserved Vegetables (Homestyle) ⭐⭐⭐
Looks quite fatty at first glance, but surprisingly:
➤Not greasy at all
➤Very fragrant
➤Even better when eaten with the preserved vegetables underneath
⸻
🌶️ Heavy Flavor Zone: Peppercorn Chili Chicken ⭐⭐
This one is more “taste-dependent”:
➤Generous use of Sichuan peppercorn and chili
➤Chicken pieces are small
➤Overall profile: numbing > spicy > meat flavor
You’ll find yourself digging through chilies to find the chicken.
⸻
🐟 Braised Sea Bass ⭐⭐⭐
➤Tender meat
➤Few bones
➤Classic home-style braised flavor
⸻
🍗 Herbal Chicken Soup (Dao Han Chicken) ⭐⭐
A large pot of chicken soup:
➤Rich broth
➤Firm chicken texture
➤Traditional stewed style
One minor issue:
The chicken isn’t pre-portioned, so you’ll need to divide it yourself—slightly inconvenient for group dining.
⸻
🥗 Supporting Dishes: Balance & Freshness
➤Stir-fried shrimp with cucumber: light and refreshing
➤Cold cucumber: crisp and fresh
➤Seasonal vegetables with pork fat: standard side dish
➤“San Ding” appetizer: very typical “dad-style” drinking snack
➤Fish-flavored shredded pork: slightly sweet, Guizhou-style
⸻
📖 Final Thoughts
👉 Overall oil level is on the higher side
By the end of the meal, most dishes have a noticeable oily base.
In summary:
✔ Authentic Guizhou flavors
✔ A few standout, memorable dishes
✔ Good environment for hosting or family meals (mall location + private rooms)
✔ Consistent quality, though not every dish is exceptional
If you want a relatively “safe” and authentic Guizhou dining experience in a comfortable setting, Dingjia Kitchen is definitely worth a try.
