Shrimp and Spinach Alfredo in Under 30 Minutes!

Servings:6-10

Ingredients:

•2 lbs of Shrimp

•3 tbs olive oil

•seasonings of your choice

•1 1/2 lbs fettuccine noodles

•1 Pint heavy cream

•1-2 cups of chicken broth

•1 healthy spoon full of minced garlic

•1 cup Parmesan cheese

•4 tbs of butter

•1 package of baby spinach

Steps:

1) Begin by rinsing your shrimp in cold water. This helps make sure all the tails and shell are off. Spread out on a paper towel and blot dry.

2) Fill a pot big enough to fit your pasta in with water. Make sure to start the boiling process for your water now so your noodles are finished the same time as your sauce.

3)In a nonstick skillet, place 1 tbs of olive oil per batch of shrimp in the pan.

4)Sprinkle all your seasonings on your shrimp. Season HEAVILY. I use paprika, garlic powder, onion powder, black pepper, salt, parsley, blackening seasoning, and lemon juice. Meanwhile, heat your skillet over medium heat.

4) Cook shrimp in your skillet until pink. This should take a total of 5 minutes. Flip halfway through to ensure an even cook. Make sure not to overcrowd your pan as this can cause your shrimp to cook unevenly.

5)By now, your pasta water should be boiling. Cook your pasta according to the package or to your preference.

6) While your noodles cook, melt your butter over medium high heat. Add your garlic and spinach into the pan. Cook until spinach is wilted. (Spinach can always be sautéed off to the side for those whom don’t enjoy it!)

7) Add your heavy cream and chicken broth(Start with 1/ cup of CB at a time). Once your heavy cream/chicken broth begins to simmer, turn your stove to low and add your Parmesan into the pan. If your sauce is thicker than you’d like, continue to add 1/2 cup of chicken broth at a time to help thin it out. Add salt and pepper to taste.

8) Drain your noodles. Before tossing your noodles with your sauce, add a sprinkle of parsley to brighten the flavor of your Alfredo sauce.

9) Add your noodles into your sauce. If desired, mix shrimp into your Alfredo. I serve mine to the side because my two small children do not eat the shrimp and I myself eat a limited amount.
