I've always been a huge fan of rich, creamy chowders, but I wanted something with a little extra depth, that smoky, savory kick you get from a good barbecue. One weekend, while I was experimenting with my smoker (you know, for some delicious BBQ — definitely drawing inspiration from that 'Smoke BBQ' vibe!), an idea hit me: what if I brought that smoky essence into my clam chowder? The result? Pure magic. It's now my absolute go-to for cozy evenings, perfect for curling up after a long day. Here's how I make my ultimate smoked clam chowder: Ingredients I swear by: Clams: I usually go for a mix of fresh littleneck or cherrystone clams if I can find them, plus a can or two of good quality chopped clams for extra clam flavor. Smoked Bacon: This is non-negotiable! Thick-cut applewood smoked bacon renders the most amazing smoky fat for the base. Aromatics: Yellow onion, celery, and garlic are your best friends here. Potatoes: Russets or Yukon Golds work beautifully, diced into small, bite-sized pieces. Broth: Clam juice (from the canned clams or bottled) combined with chicken or vegetable broth. Dairy: Heavy cream and a splash of milk for that perfect creamy consistency. Thickener: A little flour to make a roux. Seasoning: Salt, fresh black pepper, a pinch of dried thyme, and a bay leaf. Optional Smoked Paprika: Just a touch for an extra layer of smoky flavor if you don't have a smoker or want to boost it. My Step-by-Step Smokey Chowder Journey: Smoke the Bacon: This is where the magic begins.
