Apple Spiced Sweet Potatoes
The perfect side dish for the Fall months! So delicious!
~~Ingredients ~~
3 1/2 to 4 pounds sweet potatoes peeled and cut up into bite size pieces
1 (20 oz.) can Duncan Hines Comstock apple pie filling
2/3 cup golden raisins
1/4 cup granulated sugar
1/4 cup light brown sugar
4 tablespoons butter, cut into pieces
1-1/2 teaspoons apple pie spice
one recipe of candied pecans, **see recipe below
Non-stick cooking spray

Spray the inside of a 4 quart slow cooker with nonstick cooking spray.
Add the sweet potato chunks, apple pie filling, raisins, sugars, butter, and the apple pie spice, stir to mix well. Cover, cook on low heat setting for 6 to 8 hours oe on high heat setting for 3 to 4 hours.
Meanwhile, prepare the candied pecans to serve on top of each serving of potatoes.makes
**Candied Pecans
In a heavy large skillet, combine 1 cup chopped pecans, 1/3 cup sugar and 2 tablespoons butter. Cook and stir over medium high heat for 8 to 10 minutes, or until sugar mixture clings to pecans, and turns golden. Pour nut mixture onto a large piece of foil, cover completely. When nut mixture is cool, coarsely crush.
