✨Summer Meal Inspo 🍋✨

This has easily become one of my favorite things to meal prep, and it’s super easy!

-Cook Rice like you usually would. (I do white long grain about two cups for the week)

-Cut extra firm tofu into small pieces and coat in cornstarch and spices (I used garlic powder salt and pepper)

-Air-fry your tofu for about 8-10 minutes.

-Make some spicy mayo by mixing kewpie mayo, chili oil, and a little bit of soy sauce. (Adjust to taste)

- layer your rice , tofu , then add sliced cucumbers, carrots and whatever else you would like !

-Drizzle your spicy mayo sauce and you’re done!
