Creamy Coconut Shrimp w/ Rice
Season 1 lb shrimp with salt, pepper, and ¼ tsp smoked paprika. Sear in olive oil until just pink. Remove. In the same pan: Sauté 1 diced shallot until soft. Add garlic, then sliced red bell pepper and cook a few minutes. Stir in 1–2 tbsp curry paste and let it cook in the heat until fragrant.
