Easy high protein breakfast w/ protein frosting 🫶

I have a variation of these pancakes at least 2-3x a week for breakfast! They’re so simple and packed with protein! *disclaimer* I do use sourdough discard in mine but I will add the alternative for that.

Yields: 3-4 pancakes 🥞

Pancake Recipe:

- 1/4c (55g) cottage cheese (I use good culture)

- 1 serving of egg beaters (or 1 egg)

- 1 scoop protein powder of choice

- 1/4c (55g) Greek yogurt

- 1/4c sourdough discard or 2 tbsp flour

- splash of vanilla

- 1/2 tsp baking soda

- pinch of salt

- (add splash of milk to desired consistency if needed)

To make:

- In a mixer blend your cottage cheese and add to bowl, or can use emulsion blender

- Add in egg, vanilla, Greek yogurt, and sourdough as well if using. Mix to combine

- Add in all dry ingredients and mix to combine.

- Add milk if needed to desired consistency

( At this point you can add in any fresh fruit or chocolate chips to your batter you may be using in the pancakes)

Protein frosting recipe:

- 1/4c Greek yogurt (I used chobani zero vanilla)

- 1 tbsp cocoa powder

- 2 tbsp chocolate protein powder of choice (I use clean simple eats brownie batter)

- sweetner to taste

To make:

- combine all ingredients in a bowl and add to top of pancakes!!

(this is also good for dipping fruit in!)

Macros for all: (mine in particular based on what I used)

calories: 345

protein: 47.7g

carbs: 31.4g
