Sheet Pan Chicken & Veggies Bowl

1 pound chicken breast, cubed

1 can of chickpeas, drained and rinsed

2 sweet potatoes, cubed

3 carrots, sliced

3 celery stalks, cut into chunks

2 cups kale, chopped

2 Tbsp olive oil

1 tsp garlic powder 1 tsp paprika

1/2 tsp salt 1/4 tsp pepper

Balsamic glaze Avocado slices

Preheat oven to 400 F

Add all ingredients except kale, balsamic glaze, and avocados to Ziploc bag or mix in a bowl

Add to sheet pan and cook for 25 minutes, stirring halfway

Add chopped kale and cook an additional 8-10 minutes

Divide into 4 containers

Add balsamic glaze & avocado slices before eating
