Caribbean Style Chicken Smoked
🍍🔥 Caribbean Smoked BBQ Chicken Thighs 🔥🍍
Ingredients
Chicken Marinade
3.22 lbs boneless chicken thighs
1 (6 oz) can pineapple juice
1/4 cup Worcestershire sauce
1/4 cup teriyaki marinade
2 tsp cumin
2 tsp garlic powder
2 tsp onion powder
1 tsp ground ginger
1 tsp smoked paprika
1 tsp coriander
1 tsp mustard powder
1 tsp black pepper
1/2 tsp cayenne pepper
Smoking Seasoning
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1/2 tsp black pepper
Caribbean Pineapple BBQ Glaze
1 (6 oz) can pineapple juice
2 tbsp Worcestershire sauce
2 tbsp teriyaki marinade
1/4 cup honey
2 tbsp sweet & spicy BBQ sauce
1/2 tsp coriander
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp black pepper
2 tsp sea salt
1 tsp cornstarch
1 tbsp cold water
Rice
2 cups rice
4 cups water
2 tsp garlic powder
2 tsp onion powder
1 tsp cumin
1/2 tsp ginger
Black pepper to taste
Instructions
1. Marinate the Chicken
Mix all marinade ingredients and coat chicken thighs thoroughly.
Refrigerate for:
Minimum: 8 hours
Best: Overnight
2. Make the Glaze
Combine pineapple juice, Worcestershire, teriyaki, honey, BBQ sauce, and seasonings in a saucepan.
Bring to a gentle simmer.
Mix cornstarch and cold water to make a slurry.
Whisk slurry into sauce and simmer 1-3 minutes until thick, glossy, and BBQ-like.
Set aside.
3. Smoke the Chicken
Preheat smoker to 250°F.
Remove chicken from marinade and lightly season with the smoking seasoning blend.
Smoke for approximately 1½-2 hours.
Start checking temperature around 1 hour 15 minutes.
Adjust time based on your internal temperature. Cook longer if necessary until you reach your internal temperature at 165°F-170°F.
4. Glaze
When chicken reaches 165-170°F:
Apply first coat of glaze
Apply second coat 10-15 minutes later
Apply final coat before removing
Cook until internal temperature reaches 180-185°F.
5. Rice
Combine all rice ingredients.
Bring to a boil, cover, and reduce heat to low.
Cook 18-20 minutes.
Rest 5 minutes and fluff.
Serve
Pile rice onto a plate and top with smoked chicken thighs. Finish with an extra drizzle of Caribbean Pineapple BBQ Glaze.
