Shepherd’s pie for group 7! 😀
The perfect comfort food. Recipe below
1lb ground lamb
3 carrots diced
2 celery sticks diced
1 white onion diced
3tbsp butter
1.5 Tbsp chopped rosemary
1Tbsp fresh thyme
Tomato puree
1/3 cup red wine
1 tbsp Worcestershire sauce
2 cups beef stock
Salt & Pepper to taste
6 Yukon potatoes
5Tbsp butter
3 egg yolks
1 cup Swiss cheese
Add the butter and ground beef to a pan and break it apart with a wooden spoon. Add salt and pepper. Stir well. Cook for 6-8 minutes, until the meat is browned, stirring occasionally. Scoop and set aside.
Add the onions, carrot & celery. Cook for 5 minutes until onions are translucent.
Add rosemary and thyme. Stir and add tomato puree. Add beef back to pan.
Add wine, Worcestershire sauce and beef stock. Stir and add peas. Simmer for 10 minutes, stirring occasionally.
Set the meat mixture aside. Preheat oven to 400 degrees F.
Place the potatoes in a pot with water
Bring to a boil. Cook until soft and fork tender 10-15 mins
Squeeze potatoes through a potato ricer
Add butter, milk, yolks and swiss cheese. Stir until well combined.
Pour meat mixture in baking dish and layer with mashed potatoes. Bake for 25-30 mins. Enjoy
