Creamy Veggie Protein Pasta

On busy days I still want something comforting that fits my protein goals, and this creamy veggie protein pasta has been one of my easiest go-to meals lately. It’s simple, packed with vegetables, and comes together in about 20 minutes, which makes it perfect for weeknights when I don’t want to spend too long cooking but still want something warm and satisfying.

Creamy Veggie Protein Pasta 🍝

Ingredients

- 1 cup Barilla Protein Pasta (uncooked)

- 2 cups pasta sauce

- 2 tbsp heavy cream

- 2 tbsp avocado oil

- 5 mushrooms, sliced

- 1/4 yellow bell pepper, chopped

- 1/4 red bell pepper, chopped

- 1/2 small onion, chopped

- 3 garlic cloves, chopped

- Salt to taste

- Oregano to taste

- Cheese for garnish

Instructions

- Cook pasta according to package instructions and set aside.

- Heat avocado oil in a pan and sauté onion, garlic, mushrooms, and peppers. Season with salt and oregano and cook until slightly charred and softened.

- Add pasta sauce and heavy cream, then simmer on low for about 10 minutes.

- Stir in the cooked pasta, mix well, and garnish with cheese before serving.

- Enjoy!!!
