Steak Fajitas Bowls

Ingredients ✨

1/2 lb stir fry beef

Bell pepper and onion sliced (I buy fajita mix from Walmart)

1pk cilantro lime rice (or any rice you like)

Seasonings of choice (see 1st pic for mine)

1/2 tbsp w. Sauce

1/2 tbsp fajita seasoning mix

Shredded cheese of your choice to top(I used a Mexican mix)

Recipe✨

In a non stick skillet at medium high heat add beef and veggies begin sautéing. Add seasonings (less of the salted ones) and allow to cook it will make its own liquid.

Stir continuously to break up beef. Cook until beef is medium rare and add w sauce and fajita seasoning add 1 Tbsp of water to help create thickening. Cook until beef is medium well or more if you like. Place rice in microwave and follow directions on package. Turn off skillet and allow to thickening for 2-5 minutes. Plate and enjoy!! This feeds two (or one very hungry person)

... Read moreWow, these Steak Fajita Bowls are seriously a lifesaver, especially on busy weekdays! I've been making a version of these for a while, and I've picked up some great tips to make them even better, especially if you're into meal prepping or looking for a truly high-protein power bowl. First off, let's talk meal prep. The beauty of this recipe is how well it holds up. After cooking your juicy stir-fry beef and perfectly sautéed bell peppers and onions, let everything cool completely before portioning. I usually divide the cilantro lime rice, steak, and veggie mixture into individual airtight containers. This keeps everything fresh for 3-4 days in the fridge. When it's time to eat, I just pop it in the microwave for a couple of minutes until heated through. If you're worried about the rice drying out, a tiny splash of water before reheating does wonders! It makes grabbing a healthy, homemade lunch or dinner so incredibly easy. Now, for turning this into a real high-protein power bowl. While the stir-fry beef is a fantastic protein source, I sometimes like to boost it even further. Adding a can of drained and rinsed black beans or pinto beans to the skillet during the last few minutes of cooking really ups the fiber and protein content. This also helps stretch the meal if you're feeding more people! For healthy fats, don't forget the avocado! A few slices of fresh, creamy avocado on top right before serving adds so much richness and a wonderful texture contrast. It's not just delicious; it also provides essential nutrients that keep you feeling full and satisfied. Beyond the basics, there are so many ways to customize your fajita bowl. If you don't have cilantro lime rice on hand, brown rice or even quinoa makes a great base for extra fiber. For seasonings, while the recipe lists great options like Worcestershire sauce and standard fajita seasoning, I love experimenting. Sometimes I'll add a dash of smoked paprika for extra depth, or even a pinch of cayenne for a little kick. And speaking of seasonings, I've found that brands like Kinder's or a good quality McCormick black pepper really do make a difference in the overall flavor profile. Don't be shy about tasting and adjusting! Toppings are where you can really make these bowls your own. Besides the classic shredded cheese (Mexican blend is my favorite!), a dollop of Greek yogurt or sour cream adds a cool, tangy counterpoint. A squeeze of fresh lime juice right before serving brightens up all the flavors. If you like a bit of crunch, crushed tortilla chips or some toasted pumpkin seeds can be a fun addition. Overall, this Steak Fajita Bowl recipe is incredibly versatile and forgiving. Whether you're aiming for a quick weeknight dinner, organizing your meal prep for the week, or building a robust high-protein power bowl, this recipe delivers. It's satisfying, flavorful, and so easy to adapt to your personal tastes and nutritional goals. Give it a try, and let me know your favorite additions!
