Creamy garlic mushroom Puff Pastry

* 1 sheet frozen puff pastry, thawed
* 2 tablespoons butter
* 8 oz mushrooms, sliced
* 2 cloves garlic, minced
* 1 small shallot, finely diced
* 4 oz cream cheese, softened
* ¼ cup grated Parmesan cheese
* 2 tablespoons heavy cream
* 1 teaspoon fresh thyme (or ½ teaspoon dried)
* Salt and black pepper, to taste
* 1 egg, beaten (for egg wash)
* Everything bagel seasoning or sesame seeds (optional)
Instructions
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a skillet, melt the butter over medium heat. Sauté the shallot for 2 minutes. Add the mushrooms and cook until browned and their liquid has evaporated (about 7–8 minutes). Stir in the garlic and cook for 30 seconds. Remove from heat and let cool slightly.
3. In a bowl, combine:
* Cream cheese
* Parmesan
* Heavy cream
* Thyme
* Salt and pepper
Fold in the mushroom mixture.
4. Roll out the puff pastry slightly and cut it into 6 squares.
5. Spoon about 2 tablespoons of filling into the center of each square.
6. Fold two opposite corners toward the center, leaving a small opening so the filling peeks through. Pinch lightly to seal.
7. Brush with the beaten egg and sprinkle with everything seasoning or sesame seeds if desired.
8. Bake for 18–22 minutes, or until the pastry is deep golden brown and puffed.
9. Garnish with fresh thyme or parsley and serve warm.
