Ingredients

• 2 eggs (or 1 egg + 2 egg whites for fewer calories)

• 1 handful spinach

• 2–3 tbsp diced tomatoes

• 2–3 tbsp diced bell peppers

• Salt & pepper

• Optional: garlic powder, chili flakes, or everything seasoning

Instructions

1. Heat a non-stick pan on medium (use cooking spray or a tiny bit of olive oil).

2. Add bell peppers + tomatoes first and cook 1–2 minutes.

3. Add spinach and let it wilt.

4. Whisk eggs and pour into the pan.

5. Stir gently until cooked.

6. Season with salt, pepper, and spices.
