1/3 cup hot sauce (less if you don’t like it too spicy)
1 package broccoli slaw
1 tsp apple cider vinegar
1/4 cup mayo
1/3 cup Greek yogurt
Directions:
1. Preheat oven to 350°. Combine ground chicken, egg, breadcrumbs, Parmesan, and seasonings into a bowl and mix well. Roll into balls and place on a greased baking sheet.
2. While the meatballs bake for about 10-15 minutes until cooked through depending on their size, make the slaw. Combine broccoli slaw mix, mayo, Greek yogurt, apple cider vinegar, salt and pepper in a bowl and mix well. (Using part Greek yogurt adds more protein!)
3. In a saucepan melt the better over medium heat, then add the hot sauce. I used franks red hot sauce but any kind works.
4. Once the meatballs are cooked, add them to the sauce and mix until each are fully coated.
5. Serve over rice with slaw on the side and add a drizzle of ranch or blue cheese if you’d like!

Ground chicken breast is lean and high in protein, making it ideal for weight management and muscle maintenance. Combining chicken with Parmesan cheese and Italian breadcrumbs adds flavor and texture, while the seasoning with salt, pepper, and garlic powder enhances the savory taste.
Preparing the meatballs in the oven helps keep the process simple and healthy, avoiding excess oil from frying. Pairing the meatballs with a fresh broccoli slaw offers a crunchy, low-carb vegetable option that complements the spicy meat perfectly. This slaw is made creamy with a mix of mayo and Greek yogurt—a fantastic way to add extra protein and probiotics, which support digestion and overall health.
Using apple cider vinegar in the slaw dressing not only adds a tangy brightness but may also have potential benefits for blood sugar regulation. The hot sauce coating on the meatballs, such as Frank's RedHot, provides a spicy kick that can be adjusted to taste. For those sensitive to spice, reducing the amount of hot sauce or substituting with a milder sauce works well.
Serving these meatballs over rice creates a balanced meal with carbs, protein, and veggies. You can customize this dish by swapping rice for cauliflower rice or quinoa to suit different dietary preferences. Adding a drizzle of ranch or blue cheese dressing on top provides a creamy contrast to the heat and flavors.
