stuffed french toast 🍞🍓🫐
This morning I was going to make a yogurt bowl.
Simple. Responsible. Mature.
Then my daughter wandered into the kitchen and immediately asked,
“Can we have the eggy bread?”
And really… who am I to argue with that?
we end up with cream filling, strawberries everywhere, powdered sugar floating through the air, and two of us taste-testing like little breakfast goblins.
Honestly?
Parenting is mostly just saying yes to ideas like this.🍓🍞✨
CUSTARD:
• ½ c almond milk
• ½ tsp vanilla extract
• ½ tsp cinnamon
• 1 egg or flax egg
• 1 tbsp agave
• 1 tbsp coffee creamer
CHERRY CREAM:
• ½ c cherries
• 1 tbsp lemon juice
• 1 tbsp chia seeds *optional
• 1 tbsp berry jam
• ½ scoop vanilla protein *optional
• 140g coconut yogurt
1. Whisk custard ingredients in a shallow bowl.
2. Dip each slice of bread in the custard, not too long!
3. Pan-fry each slice in a large, greased skillet on your stovetop on medium-low heat. Cook about 4-5 minutes per side.
4. Melt the cherries down in a small saucepan with lemon juice, chia seeds, and jam, stirring often. You can also microwave them for 30-40 seconds, and fork mash them.
5. Fold melty cherries into yogurt until blended.
Slowly mix in protein powder, if using.
6. Add your first slice of french toast to a plate, cover with some of the cherry vanilla cream, then top with the next slice of toast. Sprinkle more fruit and maybe some powdered sugar on top. Enjoy!
