🫐 Cottage Cheese and Blueberry Muffins

✅Ingredients:

• 1 cup low-fat cottage cheese

• 2 eggs

• 1/4 cup oat flour (you can make it by grinding oats)

• 1 scoop vanilla protein powder (optional, but it adds protein)

• 1 teaspoon baking powder

• 1/2 teaspoon cinnamon (optional)

• 1 tablespoon honey or sweetener to taste

• 1/2 cup blueberries (fresh or frozen)

• 1 teaspoon vanilla extract

👩‍🍳Preparation:

1. Preheat the oven to 180°C (350°F) and grease a muffin tin or use baking cups.

2. Blend all ingredients except the blueberries in a blender or food processor until smooth.

3. Gently fold in the blueberries by hand.

4. Fill the tins 3/4 full.
